Going back to my mention of the Peanut butter cookies on a theard a couple of weeks ago, they went down REALLY well at work, and I had to pass out the recipe. I had never done it before but was looking for recipes that didn't involve animal fat due to one of my colleagues looking after her Cholesterol levels. This was unusual because it only has Peanut Butter, sugar, egg and a bit of Bicarb of soda. That's all, yet it comes out like a cookie with flour! Because it has only a few ingredients, and is not too sensitive over proportions, it's really quick and easy.
Recipe: Flourless Peanut Butter Cookies
1 cup of Peanut Butter (260 g)
1 cup of sugar (230g)
1 egg, lightly whipped
1 tsp of Bicarbonate of Soda (some recipes don't even use this!)
Heat oven to Mark 4 / 180 degrees
Mix ingredients, take balls of small walnut size, space on sheet with at least 2 widths inbetween, then press down on top with fork which both flattens and gives a nice pattern. Cook for 10-12 mins. Leave on tray for 5 minutes before trying to move or they will fall to bits.
Personal tips -
1) I found this extremely sweet so would recommend a quarter to a third less sugar (I just cooked some at 50% and they are a now little unsweet... Are you calling me Goldilocks?)
2) - having cooked them in winter the PB is a little stiff, so I microwaved it for 10- 20 seconds which made it MUCH easier to mix.
3) - I found one 5 days later (would have eaten it before if I'd realised it was left!!), and they were still good.
4) - with no gluten they are slightly delicate, so no good in just a bag in your rucksack :-)
5) - taste great with some leftover chocolate ganache on the top, so a bit of melted chocolate would also do well.
6) - don't leave them out where your boyfriend can find them if you want any left to hand out at work.....
